Ken Albala

KEN ALBALA is Professor of History at the University of the Pacific in Stockton, CA. He has written numerous academic monographs, single subject food books, cookbooks, anthologies, encyclopedias and translations. His Beans: A History won the 2008 International Association of Culinary Professionals Jane Grigson Award for Food Writing. He also edited several food series and coedited the journal Food Culture and Society. His course Food: A Cultural Culinary History can be seen or heard through the Great Courses, Audible or wherever podcasts are found. He is now writing another hands-on historic cooking series. His latest book is Noodle Soup: Recipes, Techniques, Obsession.
