The number of farmers markets nationwide increased from 2,000 in 1994 to more than 8,600 in 2019. And that’s not the only indication of the tremendous growth in local and regional food outlets. What is driving consumer demand for locally- grown and produced food? What are the benefits of “eating local”? What challenges are local farmers and food producers facing?
