Thinking Outside the Plate: Changing Food Practices to Feed the Future

Updated session title and description (10/7). Food practices in the U.S. are based on outmoded and corporate-driven ideas of how to grow and eat food.  Continuing such practices will lead to further food insecurity, health risks, and environmental degradation. Kayann Short, Ph.D., author of A Bushel’s Worth: An Ecobiography and co-owner of Boulder County’s oldest CSA, will explore ways to increase individual, local, and regional input in food consumption as disruptions to industrialized food systems. Thinking outside the plate opens new paths to culinary enjoyment, nutrition security, and ecosystem health. Book sales and signing to follow.
